Grey, calcareous clay, with sand and pebbles.
Facing south-west at 230 m. above sea level

100% Pinot Noir

VINE TRAINING SYSTEM AND PLANTING DENSITY:
Guyot, 4.800 vines per hectare

MAXIMUM YIELD PER HECTARE:
5.000 litres

GRAPE HARVEST:
Traditional hand picking starting approximately
from the 25th of August

WINE MAKING:
White wine with soft pressing and fermentation in
controlled temperature steel tank (18°C)

MATURATION:
For 4 months on the lees

BOTTLING:
The month of February following the harvest

TECHNICAL SPECIFICATIONS:
Pressure 2,2 bar; sugars 6 g/L; alcohol content 12,5% Vol.

DESCRIPTION:
This Pinot Noir is made thanks to a white vinification.
It goes throw a second fermentation in order to get a
light effervescence. It is rich in aromas of fruit, very lively
and extremely pleasant.

PAIRING:
To be served as aperitifs, it goes especially well with
many starters, risottos and dishes based on fish

Burgundy bottles in 6 bottles boxes

8° - 10° C
